1-1/2 cups all purpose flour
4 tablespoons sugar
Pinch of salt
3 teaspoons baking powder
1-1/4 cup milk
3 tablespoons melted butter
1 tablespoons vanilla extract
*This recipe makes 14 pancakes
1. In a large mixing bowl combine flour, sugar, salt, and baking powder, and mix well.
2. Add in egg, milk, butter, and vanilla, and mix well using a hand mixer.
3. Place 2 tablespoons of batter (makes 1 pancake) onto griddle or pan and cook on each side.
Note: If using a griddle, heat to 275 degrees.
4. Place pancakes on a flat surface to fully cool.
5. Once cool, place a piece of parchment paper between each pancake.
6. Place pancakes in the freezer for about 5 hours.
7. Once frozen, tightly wrap pancakes or place them in heavy duty freezer bags.
Tip: Be sure to press the air out.
Your pancakes will stay good for 1-2 months if stored properly. When you’re ready to eat them, simply remove from the freezer, reheat, and enjoy!
