10 eggs
1 bag frozen diced potatoes
1 tube turkey sausage
1 bell pepper
½ to 1 cup frozen spinach, thawed
2 sweet bell peppers
8 oz. bag of cheddar cheese
½ onion
3/4 cup milk
1 tsp. salt
½ tsp. black pepper
½ tsp. garlic powder
Nonstick spray or oil
DIRECTIONS
1. Coat the crockpot with nonstick spray or oil.
2. Lightly brown turkey sausage, drain any liquid, and set aside.
3. Dice peppers and onion into small pieces.
4. In a large bowl whisk eggs, milk, salt, pepper, and garlic powder.
5. Layer half of the diced potatoes, spinach, turkey sausage, and peppers, onions, and cheese in the crockpot.
6. Repeat layers beginning with potatoes and ending with cheese.
7. Pour egg mixture over the layers.
8. Cook on low for 4 hours or high for 2 hours.

I really love this recipe, however, it is a lot for my boyfriend and I alone. Do you think this will last in the fridge (once cooked) for a few days or so?
It would be great if we could just heat up a bowl and go in the morning for a few days.

After cooked, cut inro servings, wrap & freeze, vacuum pack or ziplock. Take out what Ya want for morning, thaw & heat thru.
