One Pot Meal: Ham and Vegetable Fried Brown Rice
2 cups cooked brown rice
1 tsp sesame oil
1 cup diced ham
½ cup shelled edamame
½ cup shredded carrots
2/3 cup soy sauce
¼ cup brown sugar
2 tsp ground ginger
1. In a large skillet, heat 1 tsp of sesame oil and sautÃ© ham with edamame and carrots for 4-5 minutes.
2. Add brown rice and cook, stirring constantly for about 5 minutes.
3. In a small bowl, combine soy sauce, brown sugar and ginger. Stir to combine. Add half of the soy sauce mixture to the pan and stir to coat the rice. Remove from pan.
4. Spray cooking spray into pan and add eggs. Cook, scrambling with a fork, until done. Stir cooked eggs into rice. Add additional soy sauce mixture if desired or serve on the side.
The next time you’re craving Asian food, put down the takeout menu! While it doesn’t come with a fortune cookie, this one pot meal of ham and vegetable fried brown rice is an excellent choice to satisfy your craving.
