After all, who doesn’t love a fun BBQ with friends and family, kicking back with a refreshing sweet-raspberry tea, or indulging with a sweet, cold treat on a hot day? If you’re looking for a little inspiration for your next summer gathering, these easy summer recipe ideas are sure to do the trick!
Grandma’s Zucchini Bread
Zucchini bread is the first of my easy summer recipe ideas. This delicious recipe comes courtesy of my late grandmother. I feel obligated to warn you now that it’s super addicting! Even my one-year-old who throws the majority of his food on the floor loves it. Heck, with two and half cups of sugar what’s not to love?
- 2 cups of finely chopped zucchini
- 3 eggs
- 1 cup of vegetable oil
- 2 ½ cups of sugar
- 1 teaspoon of vanilla
- 3 cups of flour
- 3 teaspoons of cinnamon
- 1 teaspoon of salt
- 1 teaspoon of baking soda
- 1 ½ teaspoons of baking powder
First, beat the eggs. Then mix in the sugar, oil, zucchini, and vanilla. In a separate bowl sift together the dry ingredients. Add dry ingredients to creamed mixture. Bake in two greased loaf pans. Bake 50-60 minutes at 350 degrees.
Versailles Poultry Days BBQ Chicken
Are you just looking for an excuse to light up the grill? If so, this recipe is for you! This easy recipe will leave you with the most amazing barbecue chicken you’ve ever had. It’s a copy of the recipe for Versailles Poultry Days BBQ chicken. Never heard of Versailles Poultry Days? That isn’t surprising; unless you grew up in Versailles like I did, you probably have no idea what it is or where it is. It’s an annual summer festival where they make the most incredible barbecue chicken.
- 1 pint vinegar
- 1 pint water
- I tablespoon of sugar
- 2 tablespoons of Worchester sauce
- ½ lb butter or margarine
- Dash of garlic juice
- 2 oz (4 tablespoons) of salt
Start by mixing all of the ingredients (except the chicken) and then heating your mixture. Next, marinate the chicken. Since you likely do not have a large barbecue pit in your background like those found at the festival, an outdoor grill will provide the next best result.
To be honest, to really taste the amazingness that is Versailles Poultry Days BBQ chicken you have to visit the festival itself that is held every June. If you live near Versailles, Ohio, it is a must stop. If you do not have the opportunity to taste the authentic Versailles Poultry Days BBQ chicken, then this copy cat recipe is the next best thing, making it another of my favorite summer recipe ideas.
Mom’s Homemade Ice Cream
The last (but certainly not the least) easy summer recipe idea comes from my mom and its for homemade ice cream. Yum! Give me just a moment to think about just how much I love homemade ice cream…. Okay, I’m back. There is nothing better in the summer than homemade ice cream, and while it’s last, it’s certainly not the least of my favorite summer recipe ideas.
- 6 eggs
- 3 small boxes of instant pudding (any variety)
- 1 ½ cups of sugar
- 2 cups of half & half
- 2 T. vanilla
Blend all ingredients together well. Pour in freezer and add milk to freeze line. Freeze. Makes 1 gallon.
Delicious in all pudding flavors.
