Cheesy Baked Cauliflower
One of my least favorite parts of the week is when I sit down with my printable menu planner and try to figure out what to feed my family. Since I have a picky little eater and I hate wasting food, all to often, I feel like we’re stuck in a food rut, eating the same meals over and over. Boring! To prevent that, I’ve decided to try a new recipe each week. This week? Cheesy baked cauliflower.
And… ding, ding, ding, we have a winner!
If you’re looking to shake things up with your dinner routine, I highly recommend this cheesy baked cauliflower recipe. Trust me, the whole family (yes, even your picky little eater) will enjoy this nutritious and delicious side dish.
This cheesy baked cauliflower is inexpensive, easy, quick, and healthier than many other side dishes, so what’s not to like?
I love the fact that most of the ingredients I need for this recipe are already in my kitchen. In addition, since this cheesy baked cauliflower takes just 10 minutes of prep time, it’s perfect when you need a dish that’s fairly hands off.
Last, but not least, between you and me, I love that this cheesy baked cauliflower recipe gets my kiddo to actually eat a vegetable. Seriously, I don’t have to dance, sing, beg, or cry… he just eats it! 🙂
If you too have a picky eater (or simply aren’t a big fan of vegetables yourself), this cheesy baked cauliflower is a must try. I’d also recommending trying:
1 head of cauliflower, cleaned, and broken in florets
2 tablespoons extra virgin olive oil
1 teaspoon sea salt
1/2 teaspoon black pepper
1 teaspoon paprika
1 teaspoon garlic powder with parsley
1/2 cup grated Parmesan cheese
8×8 baking dish
Makes 4 servings.
1. Preheat oven to 425°.
2. In a small bowl mix together salt, pepper, garlic powder, and paprika.
3. Add cauliflower florets to a large mixing bowl and toss with extra virgin olive oil.
4. Add spice mix to cauliflower and toss to coat.
5. Pour cauliflower into a baking dish
6. Bake for 15 minutes.
7. Flip cauliflower over, top with Parmesan cheese, and bake for another 15 minutes.
Tip: Make this cheesy baked cauliflower a little healthier just by using less Parmesan cheese.
8. Serve and enjoy cheesy baked cauliflower.
